Brown Rice & Flax Bread Recipe

Good Morning!

I hope your week is starting off well. I have a new recipe to share. Last night during my Sunday prep I decided to make my own version of the popular Ezekiel bread.

 

First, I don’t have an actual bread pan so I had to use this dish. I would recommend you use an actual bread loaf baking pan for best results. Ideally an 8 x 4 inch pan works best.  I’m going to buy one soon so I can make this again properly.

Ingredients:

Small batch 6-8 slices
1 1/2 cup of brown rice flour
1/3 cup of flax meal
3/4 tsp of baking powder
1/4 tsp baking soda
1/4 tsp salt
1 cup of cashew milk (almond or dairy could be used)
2 eggs

Large batch 8-12 slices
3 cups of brown rice flour
3/4 cup of flax meal
1 1/2 tsp of baking powder
3/4 tsp baking soda
3/4 tsp salt
2 cups of cashew milk (almond or dairy could be used)
3 eggs

Optional ingredients:
1-2 Tbsp of agave nectar for a sweeter bread
1-2 Tbsp whole flax or chia seeds.

Instructions:
1. Preheat oven to 350
2. In a large bowl whisk together all dry ingredients so they are mixed thoroughly.
3, In a separate bowl whisk together the wet ingredients.
4. Mix wet and dry ingredients together with large kitchen spoon.
5. Oil your bread pan.
6. Bake for 60 minutes.
*Optional: Sprinkle flax seeds on top before baking.
7. Let the bread cool for 20 minutes and then slice.
8. Store bread in a zip lock bag in the fridge for up to a week.

5 Overnight Oats Recipes To Try This Week

Yesterday I posted a picture on my Instagram (follow here) of some Sunday prepartions I did for my busy work week. I am trying to get into the habit of preparing meals, setting out clothes, and planning activites each Sunday to make life much easier during the week. One of the things I always do is prepare breakfasts for the week. Last week I made the health muffins and this week I prepped Overnight Oats.

If you are a Tone It Up girl then you will be very familiar with this recipe. It is so easy to make and personalize with the ingredients you like. The base is 1/4-1/2 cup of quick oats and unsweetend almond milk (you can use any milk you like). To prepare you just add your ingredients to a mason jar or small container and then cover everything with your milk,sti, and leave it in the fridge while you sleep. I would add a generous amount of milk because the oats will soak it up overnight. Hence, Overnight Oats. Some people like to eat them cold straight out of the jar but I like to heat mine up in the morning. It’s all up to you.

Here are 5 of my favorite Overnight Oats recipes:

Double Almond
1/4 cup of  oats
1 scoop protein powder
Dash of cinnamon
1 pkt of stevia
1 Tbsp of almond butter
Almond milk to cover oats

Chocolate Covered Coconut
1/4 cup of oats
1 scoop PB2 chocolate OR any chocolate nut butter
1 pkt stevia
Coconut flakes
Coconut milk to cover oats

Blueberry Muffin
1/4 cup oats
1 Tbsp protien powder
Dash of cinnamon
2 tsbp of agave nectar
Handful of blueberries
Almond milk to cover

Chia Strawberry
1/4 cup of oats
3 strawberries, sliced
1 tsp of chia seeds
1 pkt of stevia
Almond milk to cover

Banana Nut 
1/4 cup of oats
1 pkt of stevia
1/2 banana, sliced
1 handful of walnuts
Almond milk to cover

DOLLAR TREE DIY: Make Your Own Swatch Book

I’ve got a helpful DIY that you can do this weekend while you’re watching Netflix, TV, or YouTube.

I just posted a video on my YouTube channel. (find it here). That video is all about how you can swatch your beauty products and organize those swatches in a book. This is a great way to organize your makeup and know exactly which shades you have or don’t have. I like to take this lightweight book with me when I go shopping. When I see a lipstick I want to buy I can instantly check my collection to see if I have that shade. How great is that?!

This is also good to have if you are a makeup artist. Your clients can easily see which shades they have to chose from.

Additional tips:
~Cover each swatch with clear tape to keep the product from transferring onto the plastic covering of your photo album pages.
     ~You could also laminate the swatch sheets
~Swatch anything you want! You can swatch lipsticks, nail polishes, eye shadows, or blushes.
~You could handwrite each product name but I think it’s best to type up the names. Then again, I have bad handwriting. Haha
~Share your swatch book with a friend so they can see swatches of products they might be interested in purchasing.
~Another option is to print out photo swatches from the internet of your products.
~Instead of swatching items on your hand in-store; bring a blank sheet of paper to make swatches. You can add a category in your book which has swatches of products you would like to buy in the future.

Healthy Breakfast Muffin Recipe

Good Morning!

I hope everyone’s week is starting off great. Today I want to share a recipe I made while doing my weekly meal prep yesterday. I am really trying to get into the habbit of prepping all of my meals for the week each Sunday. These muffins are a combination of a few different recipes I have seen, including the amazing Tone It Up protein pancake recipe. (find it here) I also got inspiration from Sarah fit (find her recipe here). Below is the final recipe I created. These are paleo, gluten-free, low carb, high protein, and low fat. Yippee!

This makes 4 big muffins or 8 small muffins.

Ingredients:
~2 medium bananas, mashed.
~2 Scoops protein powder of your choosing (I use a plant based one)
~4 tbsp flax seed meal
~4 tsp of cinnamon
~4 egg whites or 3 egg whites and 1 whole egg
~2 tsp of baking powder
~1 1/2 tsp of baking soda
~Pinch of salt
~1 Tbsp of almond milk (you could use any milk you prefer)
~1-2 Tbsp of agave nectar or honey. This depends on how sweet you want them.
~Add in your favorite fruits, nuts, or seeds. In the ones above I used golden raisins and sunflower seeds.

1. Preheat oven to 350 degrees. (176 Celcius)
2. Combine all ingreidents except the agave nectar and fruit/nuts.
3. Mix well.
4. Fold in nuts/fruit.
5. Add agave nectar and mix again.
6. Bake for 35-45 minutes, checking them every 20 or so minutes. When a tooth pick comes out clean you are good to go.

These can be stored for 2-5 days in the fridge. When you are ready to eat them just pop them in the microwave for 10 seconds.

Bubble Curls: Quick and Easy Hair Tutorial

Today I combined two of my Black Friday finds to create a hair tutorial for you all.

If you follow me on Instagram (courtney.val) then you may have seen my new camera (yay!). I spent all of yesterday taking photos of my rabbit so today I thought I would branch out and give the video function some love. I also found a new hair curling device at a Black Friday sale yesterday and after I tested it out I was so happy with the result I just had to *try* to film a hair tutorial. This is my first tutorial so I hope it is easy to follow and you all enjoy it!

NEW VIDEO: Girl Scout Cookie Thin Mint Body Scrub (Plus The Story Behind It)

Hello!

I just posted a new video to my YouTube Channel that shows you how to make your own body scrub that smells just like a Girl Scout Thin Mint cookie! You can watch the video here.

If you saw my Tree Hut products review then you may remember I mentioned that I wanted to try coffee body scrubs for their exfoliating and firming properties. Before I ran out and bought one I decided to make my own. I simply mixed coffee grounds and coconut oil together and scrubbed away in my bath. After I drained the water from my tub there was quite a mess so I whipped out my Dr. Bronner’s Peppermint soap to clean it up. As I was cleaning I noticed the coffee and Dr. Bronner’s scents combined smelled just like a Thin Mint Girl Scout cookie. (light bulb moment!) I added one more secret ingredient (watch the video to find out!) and I had a delicious smelling body scrub.

So, that’s the little story behind this DIY. It’s super easy to make so check out my video and make your own!

Today’s Snack Attack

Having a mid-day snack attack? Try this:
1 Tbsp peanut or nut butter of your choice
Sprinkle of unsweetened coconut flakes
The peanut butter and coconut contain good fats that stimulate brain activity to keep you alert and energized. If you are concerned about sugar or salt intake choose a nut butter that is unsalted and raw. 
You can also easily make your own nut butter. Here’s how:
What you need:
Food chopper or processor
Desired type of nut
Tsp of honey
~Chop nuts until they become a mealy texture
~Add in honey
~Keep blending until you have a smooth consistency. Add in more honey if needed. 
I have also made nut butter with just water instead of honey but I find the honey adds a nice sweetness.

Favorite 4th of July Recipes

Happy almost 4th!

Today I wanted to share with you some of my favorite recipes to make for Independence Day. (Yay!)

Last year I made two desserts: protein cookies with Greek yogurt icing and these:

I bet you can guess which dessert was more popular. Hehe. These are just white cake cupcakes with some red, white, and blue decorations. I think my protein cookies were not sweet enough so maybe I’ll work on that for this year’s treats.

As you can tell I chose recipes that are mostly quick and easy to make. From personal experience Independence Day is a holiday where people like simple foods they can munch on. Since most BBQs and meals for this holiday are not sit-down style people might not appreciate your elaborate foods as much as with another holiday. So my advice is to keep it fresh, simple, and tasty.

Date & Coconut Treats

Aloha!

Today I have a quick treat recipe to share. I was inspired to make these after I saw some delicious looking coconut macaroons in the bakery case of a local coffee shop. These are my version of those macaroons.

What You Need:

  • A food chopper or processor
  • 3 Dates with the seed removed
  • 2 Tbsp of unsweetened coconut flakes
  • 1 Tsp of sweetened coconut. Alternatively you could add in 1tsp more of unsweetened coconut along with a little sugar or stevia.
  • Spoon

Directions:

  • Add in ingredients 
  • Pulse the food chopper in slow bursts at first to break up the dates and then let it blend until you reach a consistency that looks like this:
  •   Then spoon out a little of the mixture and roll it into a ball or form into a cookie shape, depending on what you prefer. 
  •  Place the finished treats into cupcake liners and enjoy immediately or place in the fridge to enjoy later.

These are a great way to satisfy your sweet tooth without overdoing it. They are vegan, gluten-free, and all natural. You can’t get much better than that!

DIY: Make Your Own Vegetable Make-up!

Hola!

A few days ago I posted a video on my YouTube channel demonstrating how I made some all natural, allergen-free veggie make-up. You can check it out HERE or watch below.

If you want to follow along with the video here are ingredients you will need:
~ 1-2 slices of beet
~Food processor or food chopper.** I got my little food chopper at Walmart for about $8.
~2 tbsp of water
~A small mixing bowl and spoon
~1 tsp of coconut oil heated to a liquid
~Small container to store your product
~Freezer

**You could also juice some beet if you prefer.

This product gives your lips a really nice rosy tint similar to the Benefit Bene-tint. I love it! It is also really moisturizing. It works best on your cheeks if you dab it in the area you want and blend QUICKLY. As is the case with most liquid/cream blush products you don’t have a lot of time to work. If you get a too much on or the color spreads where you didn’t want it, you can always go over that area with your foundation or powder brush.

Ok, and now for the final test….before and after!
